Salt and pepper to taste
1 cup or so of all-purpose flour
Vegetable oil for frying
Using a sharp knife, trim any excess fat from meat. Cut into portions, 4-6 oz each. In a small bowl, combine the flour, salt, and pepper. Fill a 10“ iron skillet with oil about ½” up the sides. Place skillet over medium heat. As the oil heats, sprinkle a tiny pinch of flour on top to test. If it sizzles immediately, it is ready for frying. Coat the meat in the flour mixture and gently place it in the skillet. Be careful as the oil may pop and spatter. Cook until golden brown on the bottom. Flip it over and continue cooking until golden brown and cooked through. Adjust the heat as needed to avoid burning. Drain steaks on a plate lined with paper towels to remove excess grease. Serve with creamed potatoes, gravy, and biscuits. – Miss Ouida
