  Salt and pepper to taste

1 cup or so of all-purpose flour

  Vegetable oil for frying

Using a sharp knife, trim any excess fat from meat. Cut into portions, 4-6 oz each. In a small bowl, combine the flour, salt, and pepper. Fill a 10“ iron skillet with oil about ½” up the sides. Place skillet over medium heat. As the oil heats, sprinkle a tiny pinch of flour on top to test. If it sizzles immediately, it is ready for frying. Coat the meat in the flour mixture and gently place it in the skillet. Be careful as the oil may pop and spatter. Cook until golden brown on the bottom. Flip it over and continue cooking until golden brown and cooked through. Adjust the heat as needed to avoid burning. Drain steaks on a plate lined with paper towels to remove excess grease. Serve with creamed potatoes, gravy, and biscuits. – Miss Ouida

  Acknowledgements

When I published my first book in the summer of 2016, I had no idea how long my writing career would last. I only knew I wanted to write, and I hoped that people would enjoy what I wrote. Fast forward seven years. I have published seven award-winning books and cookbook, with more in the to-be-written file! I am blessed beyond measure.

But I did not get here on my own. First of all, I thank God for gifting me with a talent for words, and a wonderful husband who understands and supports me in every way possible.

I cannot express the depth of my gratitude to Patty Wiseman, mentor-extraordinaire, my favorite nitpickers, Phyllis Still, Beth Howlett, and Ruth Buck, as well as members of my writers’ groups. I would not be able to do what I do without them. Your support means everything to me.

  About the Author

Dana Wayne is a sixth-generation Texan, an admitted die-hard romantic, and a lover of good food, good wine, and good company. She routinely speaks to book clubs, writers’ groups, and other organizations and is a frequent guest on numerous writing blogs. A strong advocate for new authors, she started a podcast in 2020 called A Writer’s Life, where she shares her experiences on the road from writer wanna-be to award-winning romance author. Her romantic stories are filled with strong women, second chances, and happily ever after. Among her many accolades are the prestigious international Best Indie Book Award, Readers Digest Bronze Medal, three RONE Award Nominations, two Finalists in Page Turner Awards, and is listed in the Top 50 Indie Authors You Need to Read.

“I am all about the romance and strive for realistic characters. My work is character-driven with a lot of emotion. While they are steamy, I believe romance is about emotion, not sex, and the journey is more important than the destination.”

She is a long-time member of The Writers League of Texas, East Texas Writers Association, Northeast Texas Writers Organization, and East Texas Writers Guild
